How Raw Honey Is Produced?

Lebanon’s land is small but full of contrasts — citrus trees by the sea, wild thyme on sunny slopes, oaks standing tall in the mist. This variety is what makes our honey special. Our hives travel through these regions, gathering flavors that change with every bloom and every breeze.

Harvesting with Patience
We never rush the bees. Each honeycomb is harvested only when it’s fully capped, meaning the honey has matured naturally and holds its richest nutrients and aromas. It’s slow work, but the bees set the pace — not us.

Cold Extraction
Once ready, the frames are opened and the honey is spun out using cold centrifugation. No heat, no additives, no shortcuts. This gentle process keeps the enzymes, antioxidants, and pollen exactly as nature made them.

Minimal Filtration
We strain only to remove bits of wax or stray propolis — nothing more. The natural pollen stays in, giving our honey its cloudy glow and its unmistakable authenticity.
